Kathirikkai Stuffed Kuzhambu-
Baby brinjal is used for this spicy tangy rich taste curry it is easily available in stores and markets, in villages we get fresh from farm in different colours purple,light green,white and purple with white lines on it.Purple coloured baby brinjal is good for this curry.
1..Brinjal is very nutritious.
2.Brinjal helps in the treatments of malaria.
3.It is rich in soluble fibre content.
4.The eggplant is effective to control high blood cholesterol.

Ingredients::
Baby Brinjal-1/2 kg
Onion shallots-9 nos(skin peeled)
Garlic-9nos(skin peeled cut both lengthwise)
Tomato-1 chopped or puree-1 1/2 tsp
Tamarind juice -1 lemon sized extract(2 tbsp)
Curry leaves-2 twig
To Grind:
Garlic-4 nos
Tomato-1(small size)
Fennel seeds-1/2 tsp
Cumin seeds1/4 tsp
Coconut-1tbsp
Sambar masala powder-3tsp
Coriander powder 1 tsp
Salt-2 tsp
Turmeric powder-1/2 tsp
For seasoning:
Oil-3tbsp
Fennel seeds-1/2 tsp
Cumin seeds-1/2 tsp
Methi seeds or powder 1/4 tsp
Method:
1.Wash brinjal make slit as plus sign on top of it,to stuff masala inside put in a wide bowl of water.
2.Grind Coconut, masala powder,coriander powder.turmeric powder, salt ,tomato, garlic,fennel seeds and cumin seeds no need to add water(water present in the tomato garlic is sufficient) grind in to paste to stuff.
3.Stuff masala inside cut brinjal keep aside.
4.Heat heavy bottom pan with 3 tbsp of oil splutter the above given ingredient.
5.Add Onion shallots Garlic and curry leaves saute well.
6.Now add stuffed brinjal saute carefully in oil until brinjal shrinks,it will loose its hardness to become soft cooked.
7.Brinjal releases masala stuffed inside to form thick gravy.
8.Add 2 cups of water and tamarind extract you can add 11/2 tsp of tomato puree cook until Brinjal completely cooked and oil floats on top.
9.Switch off the stove transfer to wide bowl serve with white rice or idly dosa.
Note:An Idea for Brinjal Stuffed Masala side dish:
If you don’t want Curry form and looking for Brinjal stuffed Masala for curd or Rasam rice here an idea….,Avoid step :5 and 8 and cook soft by closing with lid in low flame for 5 minutes.yes!!!!!! nice aroma add curry leaves and serve..
