Ingredients:
Red chilli : 2 kg
Coriander seeds : 1 kg
Pepper corns (milagu) : 50 gm
Thoor dal or Channa dal : 1/4 kg
Fennel seeds : 100 gm
Cumin seeds : 100 gm
Fenugreek seeds : 50 gm
Turmeric : 3 tbsp
Asafoetida:10 gms or 3 tbsp
Curry leaves optional

To make Sambar powder:
Roast the above ingredients on a dry tawa over slow flame separately.

Allow it to cool and grind it smooth powder.
Grind it in Mill, or grind it in the mixi.
This can be stored in air tight box for up to 6 months.
