Potato Podimas:
Potato is a very versatile vegetable, with lovers world wide. It is a vegetable that is loved by kids and adults alike. Potato podimas is a very simple dish, that can be prepared easily if you have boiled potatoes ready in hand. A very flavourful and delicious side dish, that pairs beautifully with plain rice and rasam and summa kuzhambu. The perfect comfort food for any season.
Ingredients:

Green Chillies – 1 or 2
Red chilli-1
Ginger – 1 inch
Onion 1 big size chopped

Oil – 3 tsp
Mustard Seeds – ½ tsp
Spilt Urad Dal – ½ tsp
Channa dal – 1 tsp
curry leaves
Salt to taste
Preparation:
Pressure cook the potatoes. Cool, remove skin and mash them coarsely add salt and mix it
.
Heat a Kadai with oil, splutter mustard seeds, channa dal and urad dal. Once the dal turn golden add, chopped green chillies, grated ginger,chopped onion and curry leaves. Fry for a minute.
Add mashed potatoes saute well.
Mix well and cook uncovered for 5 to 10 minutes in low flame.

Remove from heat ,Mix and serve hot with rice and rasam or summa kuzhambu
It can be rolled in chappathi and stuffed in pooris to feed children.
