Eggs -2 or 3
Turmeric powder-a pinch
Chili powder-1/4 tsp
carrot grated-1 tbsp
Capsicum finely chopped-1 tbsp
Onion chopped-1 1/2 tsp
Coriander chopped few
oil for sauteing
Heat a pan sprinkle some oil add chopped onion saute for a while, add carrots and other chopped vegetables to saute for a minute.
Finally, add tomato and coriander leaves no need to cook for long time, this method is followed just to avoid oozing out of juices from vegetables to the eggs while beating .
Now time to mix all to the eggs, add chili powder, turmeric powder, salt and crushed pepper then bring the sauteed vegetables to mix in the eggs, beat well until you get good foam so that the omeltte will be soft and tasty.
Heat pan again with few drops of oil take a ladle full of this egg mixture and pour on a hot pan.
Cook both sides on a medium flame. Serve as such or with a slice of bread even with variety of rice and Tamarind rice this omeltte will be delicious. We use to enjoy simply with plain cooked rice and Rasam.
