Toor dal: A very popular and preferred dal in India, toor dal is light and yummy. Apart from protein and fibre, it contains folic acid which helps prevent anaemia and is also important for pregnant women as it is essential for foetal development and can help prevent neural tube birth defects such as spina bifida. It is low in calories so is good for people who are on weight loss diets. It also helps control blood sugar levels.
Toor dal boiled-1/2 cup
Sambar masala powder-1 tsp
Turmeric powder-1/4 tsp
Shallots finely chopped-5 nos
Oil or Ghee-1 tsp
Cumin seeds-1/2 tsp
Urad dal-1/2 tsp
Curry leaves-1 twig
Take 250 gms of Brinjal cut into small cubical shape.
Take a pan or cooker, add cut Brinjal,chilli powder,Turmeric powder and salt, mix and allow it to boil until brinjal gets soft or pressure cook for one whistle.Remember,brinjal takes very less time to cook.
Now add boiled Toor dal, allow it to boil for 3 minutes.
Heat pan with oil season with the above mentioned ingredients.
Add curry leaves and finely chopped Onion,saute until golden yellow,Add this to the boiling ingredients and switch off stove.
This can be served with any Spicy gravy, which adds no dal in it.
