Potato Filling: This basic preparation will be useful for many recipes to stuff in like Masala Dosa, Alu Paratha, Puri side dish called puri Kizhangu, Bonda, masala balls this can be filled between toasted bread slices etc…….add some peas to fill in puffs.
Ingredients:
Potato-1/2 kg
Onion Big -2 chopped
Green chillies-7 nos chopped
Curry leaves – 2 spring
Ginger Garlic paste 1 tbsp
Turmeric powder
Salt -1 1/2 tsp
Coriander-chopped hand full
For Seasoning:
Mustard seeds-1 tsp
Cumin seeds1/4 tsp
Urad dal-1 tsp
Channa dal -1 tsp
Oil 2 tbsp
Method:
Boil Potatoes drain the water completely.
Peel and mash, it should not be watery.
Heat wok adds oil and splutters the items given above “For seasoning”.
Add chopped Onion, green chillies and curry leaves saute until onion gets translucent.
Add Ginger Garlic paste cook until raw smell changes.
Add Salt and turmeric powder mix well add smashed Potato and cook for 5 minutes in medium flame.
Add chopped coriander and switch off.
Now filling is ready for Masala Dosa or Bonda.
