Yellow Pumpkin Roti:

Roti/Chappathi is always welcome with more curiosity. Many variants can be made to bring the roti delicious and interesting with or without a side dish, one such recipe here we have Yellow Pumpkin Roti. Simply delicious try and enjoy with Green apple, cucumber raitha it will be a more suitable side for this roti.

Ingredients:

Yellow pumpkin-300gm peeled and sliced. Instead of Pumpkin Sweet Potatoes can be used alternatively will be delicious.

Wheat flour-200- gm

Salt- 1/2 tsp

Chili powder-1/2 tsp

Kasuri Methi-1 tsp

Youghurt-1/4 cup for mixing the batter

Butter or Olive oil-1 tbsp

Method:

Steam cook sliced Pumpkin and mash it.

Take a wide bowl, add mashed pumpkin, Salt, Chili powder, kasuri methi and butter/Oil mix well.

Now, add wheat flour and mix well in the mixture no need to add water just add yoghurt little for mixing, and mix the batter to roti consistency.

Divide the batter to equal lemon sized balls.

Role it to a thin patties heat pan and cook both the sides. It will puff up to give you the soft texture.

Serve with Green & Apple cucumber Raitha.
