Curd Rice:

Easiest recipe in cooking is Curd rice.Simple and body coolant for this hot summer.Indian food certainly cannot do without yoghurt. From spiking up buttermilk to taking the form of a raita, or as a dipping with garlic and herbs,curd makes for a versatile addition. And in the hot season, it can also cool down the body faster than any other food. Curd has ‘good bacteria’ present in it which strengthens your immune system by fighting against several micro organisms that are present in the body. It is also useful in preventing vaginal yeast infection in women.Prepare this yummy  yoghurt rice and this can be enjoyed with,with mor Milagai,Mithukka vathal or with any pickle

Ingredients:

Cooked rice 2 cups

Curd-1 cup

Milk -1 cup

Salt-1 tsp

Cucumber grated-1 tbsp

Carrot grated-1 tbsp

Pomegranate-1 tbsp(optional)

Curry leaves-1 tsp

Coriander leaves chopped-1 tbsp

To temper:

Oil-1 tsp

Mustard seeds -1 tsp

Urad dal-1 tsp

Hing/Asafoetida-1/4 tsp

Ginger-1/2 tsp grated

Green chilli-2 nos chopped

Curry leaves-1 tsp chopped

Method:

In a wide bowl Add cooked rice and milk mash it well add some water if needs.

Add curd and Salt mix well ,now add chopped Cucumber and  Grated Carrot, mix gently.

Season with the above mentioned ingredients,add chopped green chilli ,Ginger and Curry leaves saute well and drop it on top of mix curd rice  add chopped Coriander and Pomegranate mix well to serve.

Fresh cream can be added to enhance the taste.
