Chicken Green sukka Varuval: Chettinad special sukka varuval in green version.
This is prepared using all type of spices and aromatics. The meat is cooked on low fire so that the spices get to do its work. A spicy, flavoursome preparation where the meat is juicy and succulent with the aroma of the spices.
Ingredients:
Chicken-1/4 kg
Onion-1 chopped
Tomato -1 Choppe
Ginger paste-1 tsp
Garlic paste-1 tsp
Turmeric powder-1/4 tsp
Salt- 1tsp
Garam masala powder-1 tsp
Curry leaves-1 twig
To Grind:
Green chillies-5 nos
Podhina\Mint leaves-1/2 cup
Coriander leaves-1/2 cup
Fennel seeds-1 tsp
Cumin seeds-1/2 tsp
Pepper-1/4 tsp
Cinnamon-1 stick
Cloves-3 nos
To season:
Cinnamon-1 small
Cloves-2 nos
Kalpasippoo- 1 pinch
Elaichi-2 nos
If you do not like too much of spices,season with only fennel seeds,elaichi and cumin seeds.
Method to Prepare:
Wash all greens and grind to paste ,”To grind “ingredients.
Wash and clean chicken cut in to medium sized pieces.
Heat pan with 1 tbsp of oil and season with the above mentioned Ingredients.
Add onion and curry leaves saute well ,add Ginger, Garlic paste to it saute until raw smell vanishes, sprinkle some water, so that it will not get burnt.
Now add Tomatoes saute for few more minutes.
Add chicken saute for 5 minutes ,then add ground paste,Garam masala powder,Turmeric powder,1/2 cup of water and salt, cook for a while, simmer it to become soft and dry varuval.
Add 1/4 cup of thick coconut milk if preferred.
Serve with Roti,chappathi and steam cooked Rice
