Multigrain Kuzhi Paniyam:
South Indian breakfast mainly contains rice-based tiffin items like staple food Idli, Dosa, alternatively Upma, Uthappam, and Pongal. In recent days we are in use of Millet varieties many easy millet recipes in the Chettinad cookbook have been posted. Children are very choosy about their food, in such a confusing situation we have to go with the choice of flexible healthy preparation at the same time it should be easy to prepare. Dosa and Kuzli paniyaram are commonly liked by all with a suitable side dish. Here is one such recipe Multigrain Kuzhipaniyaram no need for a long process like a wash, soak, grind and ferment for hours together.
I have done with basic flour items which we normally have in our kitchen on regular basis. You can add any millet flour on an equal ratio to make this recipe. Just mix, season it with some vegies and pour on a hot pan to cook and serve.
Ingredients for batter:
Wheat flour-1 cup
Ragi flour-1 cup
Pearl millet flour-1 cup
Idli batter-1 1/2 cup left over can be use
Butter milk-1/2 cup
Salt-1/2 tsp
To saute:
Onion chopped-1 big chopped
Note: Add any vegetable if you prefer, few chopped cashews will enhance the taste.
Ginger-1 inch chopped
Green chilli-2nos chopped
Curry leaves-2 twigs Chopped
Coriander leaves 2 tsp chopped
Coconut grated-3 tablespoon
To temper:
Oil-2 tsp
Mustard seeds-1/2 tsp
Cumin seeds-1/4 tsp
Urad-1/2 tsp
Method:
- Take a wide bowl add all the flour, items mentioned above, salt and buttermilk add water, and make it to dosa batter consistency without any lumps.
2. Heat a pan with oil add to temper items once splutter add “To saute” ingredients chopped veggies, stir well on a medium flame for 3 minutes.
3. Mix the sauteed ingredients to the batter mix well. Heat kuzhipaniyaram pan smear some oil add this batter and cook , flip to the other side and cook again,
Now, the Multigrain paniyaram is ready to serve with desired chutney’s.
This same batter can be used for dosa also.
