Ingredients:

Beetroot-1

Onion-1 small

Garlic or ginger few sliced

Tomato -1

Green chili-1

Toor Dal boiled -1 tbsp

Salt -1 Tsp

lemon juice few drops

Method to prepare:

Boil chopped Onion, beetroot, green chili, Tomato and Toor dal for a whistle or two.

Add two cups of water, salt and allow it to boil for 2 to 3 minutes.

Season it with Fennel seeds, cumin seeds, and curry leaves.

OR

Season with Bay leaf, cumin, pepper and a pinch of garam masala powder.

Finally, add few lemon drops and a tablespoon of coconut milk.

The traditional method of preparing soup gives a mild taste and soothing effect to the throat and tummy, from Child to Adult. These type of soups can be consumed as a warm drink or with plain cooked rice, both has wonderful taste. Consistency- not very thick, gluey or clear soup.

Tomato-2

Green chilies-2

Moong dal- 1 tbsp (to enhance the taste and consistency of the soup, alternative to mashed potato)

Turmeric powder-1/2 tsp

Salt- 1 tsp

To Temper:

Ghee-1 tsp

Garam masala powder-1/2 tsp

Fennel seeds-1/4 tsp

Cumin seeds-1/4 tsp

Curry leaves-1 twig

Coriander leaves

Method to prepare:

Boil, moong dal for 3 whistles in a pressure pan.

Once the steam released, add chopped onion, Tomato, green chili and cook for more 3 whistles.

Mash all together to a smooth consistency, add 2 cups of water salt and turmeric powder.

Heat another pan with a teaspoon of ghee and add fennel seeds and cumin.

Add garam masala powder and curry leaves, add the soup in, allow it to boil for 3 minutes in medium flame.

Transfer and garnish with chopped coriander leaves, add pepper if necessary.

Broccoli Soup is a good appetizer with mild taste and healthy drink ,Normally we use Cauliflower for soup,but for a different taste I tried with nutritious Broccoli it is also equally good in taste to drink or with plain cooked rice.During the feast soup is surely served in chettinattu meals.Children like to drink diluted dishes soup and Payasam.

Ingredients:

Moong dal boiled-1 tbsp

Broccoli-100gms

Onion-50 gms chopped

Green chilli-3 nos

Tomato small-1

Turmeric powder-1/4 tsp

Garam masala powder-1/4 tsp

Salt-1/2 tsp

Coconut Milk fresh optional-1/4 cup(for drinking soup)

Method:

Steam cook Broccoli (cut in to medium sized pieces).

Pressure cook moong dal,bring to boil Tomato, Onion and Moong dal together for 5 minutes add steam cooked Broccoli and boil for 2 minutes.

Heat pan with 1 tsp of oil add Fennel seeds,garam masala powder and curry leaves to it, add boiling soup and add Coconut milk at last and allow it to boil for 3 more minutes.

Sprinkle coriander leaves  and serve.

This can be served to drink or served with cooked plain rice or jeera (cumin) rice.

Sprinkle pepper for more spicy taste.

Chicken -100 gms serves-4 person

Onion-1 chopped

Turmeric powder-1/4 tsp

Salt-1/2 tsp

Cumin seeds-1/2 tsp

Curry leaves-1 twig

Water 3 cups

For Seasoning:

Oil-1 tsp

Cinnamon-1/2 inch stick

Cloves-2 nos

Elaichi-1 no

Method:

Add all together in cooker and cook for 2 whistle.

Allow it to normal temperature drain soup in to a bowl ,take chicken pieces and remove bones from it.

Cut in to small pieces add to the soup.

Heat pan with one teaspoon of oil season with cloves,Elaichi and cinnamon

Add Curry leaves and chopped green chillie saute well till light brown and add soup in to it and  a pinch of garam masala powder.

Let it boil for 3 minutes add celery leaves and parsley.

If you prefer beaten white yolks can be added while boiling after seasoning.

Procedure:
1.Cut all the Fruits in even shape in to Small cubes.
sprinkle 3 pinches of salt and toss it so that the colour of apple and Banana will not be changed, Keep aside.
2.Take a pan pour 1/4 cup of water add sugar heat it until it gets completely dissolved when it starts boiling switch off the stove.Add fruits when the syrup is hot.
3.Add concentrated milk ,vanilla,essence, mix well Refrigerate for 3 hours.
4.Sprinkle saffron and chopped badam serve chilled. Enjoy the colourful year a head.

Boil Moong dal soft and smooth

Add cauliflower Onion, Green chili, Tomato in 4 1/2 cups of water boil until 3/4th cooked (10 minutes).

Add turmeric powder and Salt let it cook for 2 more minutes.

season with the mentioned ingredients with one tsp of oil.

Allow it to boil for 2 minutes.

Serve by adding chopped coriander leaves.(sprinkle some pepper powder).

This can be taken with smooth boiled plain rice.
