Palak Paneer:
Healthiest and easy dish delicious to serve with Roti/Chappathi satisfies your breakfast to have an energetic day. Children loves the color and creamy taste without any hesitation.
Ingredients to blanch:
Palak -1 bunch (clean and wash)
Tomato one chopped
Garlic cloves-2
Green chili-1
For Seasoning:
Butter-1 tsp
Onion Chopped -1
Ginger garlic paste-1/2 tsp
Garam masala-1/4 tsp
Chili powder-1/4 tsp
Salt-1/4 tsp
Method:
Blanch the above Ingredients -1Allow it to cool and blend to a paste.
Heat pan with butter add, chopped onion and ginger garlic paste when the raw smell changes add garam masala, chili powder salt and paneer slices saute for a minute add grind palak puree to the ingredients and allow it to boil in simmer for 3 minutes now it is ready, transfer to a serving bowl add 1/2 tsp of butter and serve with preferred roti or Naan
Mixed Fruit Jam:
Rich in fruit and sweetness, no doubt it is very scrumptious ready to make wonders. No artificial color or preservatives added. We used to think that making Jam is a big process and time taking procedure to prepare but actually not, simple and easy. I wonder why to go for store-bought jam instead of making this at home, save money get the natural taste and extract of real good fruit.

Ingredients:
Fruits of your choice I have used mixed fruit of 600gms
Sugar-150 gms
I have added beetroot juice 2 tablespoon or blend few Dates along with cooked fruits.
Food colour if you prefer
Lemon juice-1 tbsp/Half lemon
this acts as a natural preservative
Method:
Wash, peel, and cut the fruits of your choice.
Take a thick bottom pan and cook the fruits in medium heat no need to dd any water fruits are loaded with juice.
It will get cooked soft in 5 to 10 minutes.
Allow it to cool and grind to a smooth pulp.
Filter through stainless steel strainer for more smooth as a result. And to remove the seeds and excess fibre in the pulp.
Bring it to the pan again add the pulp, Beetroot extract for colour and sugar bring it to boil again stir continuously to a thick consistency as jam.
Stir until folding consistency.Add lemon juice mix well switch off the flame.
Allow it to cool and transfer to Glass jar

Note: If you prefer to have as such let it cook for more minutes and just mash it.

To add finally and to make glossy balls
Method:
Heat a thick bottom pan, add chopped strawberries saute for 2 minutes, now add sugar and cook in medium flame.
Fruit dissolves to become thick pulp gradually no need to add water juice in the fruit is enough, it cooks fast.
Finally, add coconut and cook until it leaves the surface of the pan.
Add a teaspoon of ghee and roll, transfer to the plate.
Make it to a small strawberry sized balls and serve mouthwatering sweet is ready now.

Normally we do baked potato wedges, Here we are going to deep fry to get crispy outer layer and soft inner part the taste is entirely different from store-bought wedges or baked Potatoes.. Wonderful starter and easy to prepare at home, children will be crazy on your taste of preparation.
Method to prepare:
Potato-4 medium size
Salt-1 tsp
Ginger garlic paste-1tsp
Chili powder or paste-1 tsp
Rice flour-1 tbsp
Pepper-1/4 tsp
Corn flour-1tsp
Method:
Scrub potatoes, wash well no need to peel skin.
Cut to the shape of long wedges.
Mix with all ingredients mentioned above.
Let it rest for 15 to 20 minutes.
Heat oil in a pan, Deep fry to golden yellow on medium flame.
Serve with cut onions and lemon juice.

Ridge gourd sauce fry:
Ingredients:
Ridge gourd
Ridge gourd- 250 gram
Garlic cloves-4
Onion chopped-1 small
Chilli sauce/powder- 1/2 tsp
Tomato Ketchup- 2 tsp
Dark Soya sauce – 2 tsp
Sugar- 2 pinches (optional)
Salt- 1/4 tsp
Method :
1 Mix all the sauce item together in a cup keep it ready.
2.Peel the skin, cut into 1 inch thick round pieces
3. Heat pan, add 2 tsp of oil and saute minced garlic, once it becomes slightly brown add the chopped onion and saute for a while.
4. Now add round cut Ridge gourd, saute until it gets translucent.
5. Finally, add mixed sauce, salt, and sugar to the cooking vegetable, cook for 3 more minutes in low flame.
6. Transfer to the serving dish and garnish with chopped coriander leaves.

Urad dal / Cashews for a crunchy bite – 1 tsp
Method :
Cube cut bread slices, keep it ready to prepare.
Wash, peel Onion, tomato, capsicum, and green chilies cut into thin lengthwise slices.
Heat oil or ghee, add mustard seeds and cumin seeds allow it to splutter.
Add cashew and fry yellow.
Add onion and grated ginger stir it for a minute, next add tomato and saute for a minute
Add salt, turmeric powder, chili powder, and sugar, mix well.
Add chopped Capsicum and saute for another minute.
Finally, add cubed bread slices and mix well so as the ingredients added will get coated on the slices.
Stir-fry for 2 to 3 minutes in low flame, it will get roasted.
Transfer to a serving dish and sprinkle some chopped coriander and pepper if you prefer spicier.
Note: Stir fry the vegetables in medium flame, do not cook tomato mashed.

Bread pizza is an interesting task to prepare at home. We can bring the same taste as the shop bought pizza at home with the bread base. Moreover, children are greatly delighted to enjoy the taste of pizza with regular bread. Make your child happy with a few minutes of effort which will please them to love you in a great deal.

Ingredients:
Bread slices 6 nos
Tomato ketchup – 6 tbsp
Red chilli flakes – 1 tsp
Shredded cheese/ mozzarella cheese-1/2 cup
Butter or olive oil -4 tsp
Vegetables as per your preference,
Oregano -1 tsp
Green bell pepper-1 chopped
Tomato- 2 chopped
Onion chopped-1
Olives- 2tbsp
Mushroom
Method:
- Place bread slices on a flat board, apply butter or Olive oil on the top side of the bread. This will help the bread not to get soggier when we spread sauce on it.
- Spread tomato ketchup on it, then chopped vegetables and olives within the surface, sprinkle shredded cheese as a top layer over the vegetables.
- Throw some red chilli flakes and oregano on the toppings if you prefer the spicy flavour.
Heat oven at 180 ͦ F. Places the bread pizza on the rack and grill for 10 to 15 minutes, till the cheese melts.
5. Enjoy the taste of Pizza with bread base.
Baked Potatoes:
The potato is a starchy, tuberous crop, a staple vegetable consumed all over the world. It is the world’s fourth-largest food crop. Potato can be prepared from the main course to the side dish, simple to heavy with aromatic Indian spices. For baked potatoes any type of stuffing, the dressing can give you ultimate taste. Your choice can be cheese, butter, mayonnaise with dash some pepper and salt. simply wonderful 🙂
Here we have simple and rich recipe baked potatoes,
Just we need potatoes-3 to 4 medium size
Butter-2 tsp
Salt- 1/4 tsp
Pepper-1/2 tsp
Parsley or coriander leaves finely chopped-2 tbsp
1. Scrub and rinse potatoes.
2. Place it on a wooden spoon, use a sharp knife to cut the entire top of the potato into thin crosswise slices (about ⅛-inch thick), stopping about three-quarters of the way down the potato so the base stays intact and the pieces remain attached to the base.
3. Put potatoes in a baking dish, then fan the slices open slightly brush it with melted butter( or stuff inside the cut). Sprinkle with salt and pepper, trying to reach in between slices without breaking slices off.
Just before the baking process gets completed, open the oven for a short time, Gently sprinkle herbs in between slices and on top of potatoes. bake just until the cheeses melt.
How long should I bake Potatoes?
There are several schools of thought when it comes to timings:
The standard method is 200C for 1hr – 1hr 20 mins.
For a super-crispy skin and a slow-cooked inside to go for 180 C for 2 hrs 20 mins.
If you’re time-pressed, ping your potato in the microwave for five minutes to soften it up, then finish in the oven for 35-40 mins.
Dragon Chicken:
Indo-Chinese special dragon chicken, something special from our regular and traditional dish loved by all becoming famous nowadays wonderful combination with any type of fried rice, restaurant-style dish hygienically prepared at home the added advantage is less price more quantity. No food colours or preservatives are added. Sweet sauces added soft spicy chicken fried and crunchy broken cashews will leave you a heavenly taste.

Ingredients to prepare:
Chicken cut into thin sliced-1/2 kg
Oil to fry – 100ml approx
To Marinate:
Corn flour-1 tbsp heap measured
Maida (all-purpose flour)- 2 tbsp heap measured
Chilli paste-1 1/2 tsp
Turmeric powder-1/4 tsp
Salt- 3/4 tsp
Ginger garlic paste-1 tsp
Soya sauce-2 tsp
Sugar-1/2 tsp
Egg -1 no
To prepare sauce:
Soya sauce (Dark)- 2 tsp
Tomato Ketchup-2 tsp
Chilli sauce-1 tsp
Black pepper-1/4 tsp
Sugar-1 tsp Ajinomoto-1/4 tsp optional this is added to enhance the taste.

Ginger Garlic paste-1 tsp
Capsicum-1/2 cut into lengthwise strips
Onion-1 chopped
To Garnish:
Spring onion-2 tbsp
Cashews broken-2 tbsp
Method to prepare:
- Take a wide bowl, add Chicken and other ingredients mentioned above “To marinate”, keep aside to set for 15 to 20 minutes.
2. In a small bowl add 1/4 cup of water, mix all sauce mentioned above “To prepare sauce”; Dark soya sauce, chilli sauce, tomato ketchup salt, and sugar.
3. Heat oil and fry the marinated chicken till golden brown.
4. Take another pan heat a teaspoon of butter and golden fry the broken cashews, collect and keep it ready to garnish
5. In the same pan add ginger garlic paste saute for a while, add chopped onion and capsicum saute for 2 minutes as it should be crunchy, not soft.
6. Now add mixed sauce and allow it to boil for a minute, now time to add the fried chicken, mix all together in low flame.
7.Transfer it to the serving bowl garnish with the fried cashews and chopped spring onion on top.

8. Serve hot with any type of fried rice and enjoy.

3. Egg Roti:
Whole wheat flour -1 cup

Meal maker(Soya chunks) – 1/2 cup dry grind it to a fine powder.
Mix powdered soya chunks with wheat flour, sprinkle water and mix along with other ingredients mentioned to enhance the flavour and taste of your regular roti.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
5. Garlic Roti:
Whole wheat flour -1 cup
Salt-1/4-tsp
Garlic-4 pods or paste-2 tsp
Mix garlic paste and mix along with other ingredients mentioned to enhance the flavor and taste of your regular roti.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
6.Vegetable extract Roti:
Whole wheat flour -1 cup
Salt-1/4tsp
Mixed vegetables boiled with a water-1/2 cup
oil-2 tsp
Boil desired vegetables like carrot, potato, beans, and cauliflower grind it to a smooth pulp and mix with wheat flour add water if necessary.
OR Mix wheat flour with vegetable broth.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
7. Sugar and Coconut Roti:
Whole wheat flour -1 cup
Sugar-1 tsp
Grated coconut -1 tbsp
Salt-1/4 tsp
Water- 3/4 cup
Oil-2 tsp
Mix sugar and coconut with wheat flour and mix along with other ingredients mentioned to enhance the flavor and taste of your regular roti.
OR Coconut and sugar can be stuffed to get a natural bite of it.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
8. Yoghurt Roti:
Whole wheat flour -1 cup
Yoghurt-1/2 cup
Kalonji-1/4 tsp
Salt-1/4 tsp
Oil-2 tsp
Mix Yoghurt salt and kalonji mix along with other ingredients mentioned enhancing the flavour and taste of your regular roti.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
9. Dal Roti:
Whole wheat flour -1 cup
Boiled channa dal-1/2 cup
Cumin seeds or ajwain-1/2 tsp crushed
Salt-1/4 tsp
Water – 1/4 cup
Oil-2 tsp
Boil Channa dal drain water and mash it to a thick puree.
Mix along with other ingredients mentioned enhancing the flavor and taste of your regular roti.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
10.Paneer Roti:
Whole wheat flour -1 cup
Paneer (grated)-1/4 cup
Chopped coriander leaves -1 tbsp
Ajwain-1/2 tsp crushed
Salt-1/4 tsp
Water3/4 cup
Oil-2 tsp
Add grated paneer with wheat flour and mix along with other ingredients mentioned to enhance the flavor and taste of your regular roti.
Set aside for 10 to 15 minutes and make roti. Serve hot with your preferable side dish.
Bread Pancake:
Interesting recipe of this delicious pancake can supply sufficient nutrients needed to your child from her snack box. The variety of snacks can fill our children’s snack box to make their lunch more enjoyable. This recipe is easy to prepare in a few minutes, moreover soft and flavourful.

Ingredients:
Bread 4 slices remove its sides
Milk 1/2 cup or buttermilk
Salt-2 pinches
Onion (chopped) – 1/4 or 1 tbsp chopped
Capsicum (chopped) – 1/4 or 1 tbsp chopped
Tomato (chopped) -1/2 remove seeds and juice from it
Green chilli-1
Mushroom (chopped) -1 tbsp
Method:
In a wide bowl add bread slices, soak in milk for 10 minutes.
Mash it to a smooth and thick batter.
Add chopped vegetables and green chili.
Add salt to it, mix it all together.
Heat dosa pan, pour a ladle full of mixture into the hot pan, cook in a medium flame.
Cook at least 2 minutes on each side of the pancake.
Delicious pancake is ready for your lunch box.
Chocolate smog:
Children always feel to have some unique variety of dishes along with our traditional preparation. Chocolate and Strawberry have an impactful choice to select. Maiden attempt of this chocolate smog gives a delightful result.

Ingredients: Yield 30 to 35 mini chocolate smogs
Cocoa powder or Cooking chocolate-50 gms
Condensed milk-150 ml
Desiccated coconut-1/2 cup,
Broken nuts-1 tablespoon
OR
Heat a thick bottom pan in medium flame, add grated coconut and fry to reduce the water content in the coconut, care should be taken such that the white color should not be changed.
1. In a wide pan add condensed milk and cocoa powder mix well, you can add 1 tbsp of desiccated coconut or broken nuts to the mixture or if you prefer as pure chocolate flavor skip nuts and coconut.
2. Heat this mixture in medium flame for 3 to 5 minutes till it gets into a thick mixture.
3. Remove from flame, allow it to get warm make it into mini balls roll it in the coconut to get a smoggy effect.
Yummy chocolate smog id ready.
Capsicum stir fry:
Cooking is an art, spice it up with your own colors to make your cooking more delicious. Passionate about capsicum made me try more wonderful recipes. Capsicum is really good in its nutritional facts, also gets cooked in minutes :). Very crunchy as such in raw form, make it yummy, dash some salt and chili saute for a while, or in a cooked form with simple and minimal ingredients is more than enough to make you delightful.
Here is a simple idea which I follow often with capsicum, a good combination to mix and eat with plain cooked rice or with roti.
Ingredients :
Capsicum-1/4 kg
Tomato-1
Onion chopped-1
Masala powder-1 tsp
Salt-1 tsp
To Temper:
Oil-2 tsp
Fennel seeds-1 tsp
Curry leaves-1 twig
Method:
Wash and cut cube Capsicum, Tomato and Onion
Heat pan with oil season it with above mentioned “To Temper” ingredients.
Add chopped onion saute for a minute to change the raw smell.
Add tomato and cube cut capsicum to it, saute for a while allow it to cook for about 3 o 5 minutes.
No need to sprinkle water, just sprinkle salt and masala powder mix well.
Yummy Capsicum stir fry is ready to serve.
Baby corn, Tofu or paneer Manchurian:
Yummy appetizer with crispy, crunchy, spicy and colorful to serve.

Ingredients-1:
Baby corn-100gms
Tofu-150 gms
Red, yellow, green pepper-1/2 each
Onion-1
Oil to fry
Ingredient-2
Maida-3 tbsp
Corn flour-1 tbsp
Salt-1/2 tsp
Ginger garlic paste-1 tsp
Black pepper-1/2 tsp
Method:
1.Take a wide bowl mix ingredient-2, by adding a little water to dosa batter consistency.
2.Cube cut vegetables and paneer (Tofu), no need to cut baby corn just make a slit slightly on either side.
3.In a small bowl,put 1 tsp of cornflour,1 tbsp of soy sauce, 1 tbsp of tomato sauce,chilli powder or sauce little, sugar-1/4 tsp and salt 1/2 tsp to it, mix well with little water and keep it ready.
4.Dip vegetables in the batter and deep fry till it gets a crispy outer layer and crunchy inner part.
5. Heat the pan with 2 tsp of oil and saute all the vegetables for 4 minutes in medium flame.
6. Add the prepared sauce above step -3, stir till it gets thicken, add fried veggies to it mix well and transfer to serve, sprinkle some greens and serve as an appetizer.

Vegetables of your choice
Carrot, beans, corn, peas, cauliflower etc…..- 1 1/4 approximately cup chopped finely
Onion – 1
Curry leaves and Coriander leaves
Method to prepare:
1. Take a wide bowl, Put all finely chopped veggies, salt, chili powder, yogurt, rice flour, and sugar.
2. Dip bread in water slightly squeeze out excess water, drop it into the vegetable, mix all together so as to blend well to make a lemon sized ball.
3. Make the balls to your desired shape, shallow fry to a crispy fritter.
4. Serve with fresh cream or tomato sauce, or pack in the box to school, taste remains the same.
Triple color bell pepper rice:
Bell pepper rice is a colorful and delicious variety of rice. Red, Yellow, and Green colored Capsicum have different taste of its own which enriches the taste of rice altogether. Normally we buy green colored Capsicum(Shimla Mirch) for cooking, but here we use all three colors to realize the original taste in each colored Capsicum.

Ingredients:
Cooked long grain rice-2 cups
Colored capsicum- 1 cup cut into cubes
Onion-1 cut lengthwise
Green chilies-2 slit
Masala powder-1 tsp
Oil-1 tbsp
Salt-1 tsp
Cumin seeds-1 tsp
Sugar-1/4 tsp
Coconut milk-1/4 cup
Fried cashew optional to garnish
Method to prepare:
Heat pan with oil add cumin seeds, add cut onion and saute for a minute till it gets transparent.
Add cube cut Capsicum fry for a minute or 2, do not cook for a long time, it should be crunchy.
Now add salt and masala powder and stir well, add coconut milk and mix together.
Add cooked rice to the vegetable mixture, sprinkle sugar mix well in low flame.
Garnish with fresh length cut, attractive capsicum and chopped coriander leaves on top serve hot.
Vegetable Stew:
Healthy Vegetables cooked in Coconut milk to enhanced flavor, seasoned with aromatic herbs. A Delicious combination with Appam, Adai, Idiyappam, and roti. The specialty of this dish is healthy vegetables not overcooked and mild spices added, a complete process is done in low or medium flame.

Ingredients:
Vegetables of your preference-1/2 kg
I used-Carrot, Beans, Cauliflower, Black chana (soaked and cooked for a whistle), Potato
Coconut milk extracted from 1/2 of the coconut.
Salt-1 tsp
Corn flour-1 tsp
Onion-1 big
Tomato medium size-1
Curry leaves-3 twigs
Coriander leaves-2 tbsp
Green chillies-3 nos slit
Ginger minced-2 tsp
Cinnamon-2 inch long
Cloves-3 nos
Elaichi-2 nos
Crushed Pepper-1/2 tsp
Olive oil-1 tbsp or your choice
Method to follow:
Extract Milk form Coconut, first milk thick 1 cup and second milk diluted 1 cup.
Chop Ginger, cut Onion and Tomato lengthwise.
Boil cubed vegetables with salt, half cooked in second diluted Coconut milk.
Add 1 tsp of Corn flour into the thick milk and dissolve without lumps, This helps the coconut milk not to curdle when boiled, this gives you a slight glaze texture to the dish.
When the Vegetable is 3/4th cooked add the first coconut milk with dissolved corn flour, allow it to boil for 2 minutes by gentle stirring.
In a wide pan add Olive or Coconut oil season it with Cloves, Cinnamon, and Elaichi.
Add Onion saute for 1 minute until onion gets separated. Do not overcook or Cook in a high flame the Colour should not get changed.
Add Ginger and Tomato saute well for a while, in low flame, do not overcook till mash up.
Add curry leaves, Transfer to the cooked Vegetable mix well let it boil for 2 more minutes.
Add freshly ground Pepper and chopped Coriander, serve hot.
Paani Puri:
Paani Puri originated at Bihar, Water in Hindi is “Paani” Variety of flavored Pani filled in mini puri’s, stuffed with boiled Potato, Green gram or Channa and freshly chopped Onion and Coriander. Delicious snack loved by all Indians it is commonly available in street side. I am not an expert in North Indian varieties, but I like to prepare and feed my son.
Sweet Paani: Grind all the ingredients shown below,
Dates-10 to 15 nos
Fried Jeera(Cumin seeds)-1 tsp
Red chili powder-1 tsp
Jaggery-1 1/2 tbsp
Tamarind paste-1 gooseberry sized extract
Green Paani:
Grind the below-given Ingredients filter and squeeze the lemon, sprinkle some salt and chat masala powder mix well.
Pudhina(Mint leaves)-hand full
Coriander leaves-hand full
Green chillies-2
Lemon half
Cumin seeds-1 tsp
Salt-1/2 tsp
Boil Potato adds some salt and pepper, Chopped Onion and Coriander to fill inside the purées
Serve with mini purees.
Note: Yogurt with salt and chili powder mixed can be served along with this if you prefer.

Ingredients for fillings: Fillings can be made up to your interest,
Mixed vegetables of your Interest-4 tbsp
Salt-1/2 tsp
Pepper black or white-1/4 tsp
Boiled Potato or bread crumbs or partially scrambled egg can be used to blend these sautéed vegetables.
Mushroom -5 nos
Method to Prepare:
Wash Mushrooms discard the thick stem of it, keep it ready for filling.
Heat pan with 1 tsp of oil sautes well all Onion and vegetables.
Sprinkle salt and pepper cook until soft.
Add any of the above blending agents, blend with sauteed vegetables.
Now fill it inside the mushroom, Heat wok, smear some oil place the stuffed mushroom close and cook for 10 to 15 minutes.
No need to worry about burning, mushroom oozes out water while cooking.
You can grill cook for both sides cooked, for 20 minutes
I have sealed with cheese on top.
Now its ready to serve as a starter.
Paneer Peas Masala:
Punjabi Special Paneer or (Tofu can be used optionally in the place of Paneer)Peas masala served commonly with Roti and Chappati. This Attractive and delicious side dish is placed in all gathering and feast. This will be creamy and mildly spicy tastes great with Naan,Roti, Chapati, and Parathas.

Ingredients to Grind-1:
Cumin seeds-1 tsp
Coriander seeds-1 1/2 tsp or (2 tsp of powder can be used)
Red chilli-3 or (1 tsp of powder can be used)
Cashews-5 to 8
Poppy seeds (Kaskasa)-1 tsp
Ingredients to Grind:2
Tomato-2 nos
Garlic- 2 pods
Grind Tomato and Garlic separately and all other ingredients separately, both into a very smooth paste.
Ingredients to prepare:
Peas-1 cup
Onion chopped -1 cup
Ginger Garlic paste -2 tsp
Salt 1 tsp
Paneer or tofu 1 1/2 cup
Garam masala powder-3/4 tsp
Method to prepare:
Heat pan with 2 tbsp of oil Shallow fry tofu for 2 minutes.,remove and keep aside.
In the same pan add Garam masala powder, add ginger garlic paste and stir well add chopped onion and Peas saute till half cooked.
Add Tomato puree and salt along to cook well.
Add cashew cumin paste stir and cook for 3 more minutes oil floats on top.
If you are adding Coriander powder and Red Chilli powder, add at this stage to boil.
Now add fried tofu or Paneer and mix well let boil for 2 more minutes.
Sprinkle chopped Coriander and serve with Roti or Chapati.
Vegetable Fried Rice:
Colorful and healthy Vegetable fried rice liked by all has become a fascinating dish in all menu cards, and in Gathering feast. This is said as Indo-Chinese recipe, As we know rice is a staple food in India we prefer to make a variety of dishes with rice. We add vegetables to add some nutrition to this long grain rice and sauces to enhance the taste. Food lovers are interested to have a variety of food.
Try this vegetable fried rice at home with little effort to make more healthy and tasty. Vegetable fried rice with the combination of Gobi Manchurian or Vegetable Manchurian can be served.

Ingredients: All vegetables chopped or cut into very small pieces
Beans-1/2 cup
Carrot-1/2 cup
Capsicum-1/4 cup
Corn kernels-1/4 cup
Mushroom-1/2 cup(optional)
Green chili-2 slit
Celery-little
Spring onion-2tbsp chopped
Basmati Rice-3 cups (cooked) long grain is best for veg fried rice
Oil-3 tbsp
Soya sauce-1 tbsp
Vinegar–1/4 tsp or 3 to 4 drops
Salt-1 tsp
Sugar 1/4 tsp
White pepper-1/4 tsp
Method to prepare:
Soak rice for 20 minutes and boil it with 1:2 ratio of water and 1/2 tsp of Salt, It should be just cooked, the rice should be separated such that it should not stick to each other.
Allow it to cool completely before you add into the fried vegetables.
Heat pan with 3 tbsp of oil, add all the finely chopped veggies including the celery. increase the flame to high and stir-fries the vegetables on a high flame. then stir fry on a medium flame.
The vegetables have to be stir-fried until they are almost cooked and yet retain their crunch.
Now add soy sauce, Salt, Sugar, Vinegar, and White pepper, stir it and add the cooked rice in it.
Stir it well so that all the ingredients mix well and sauce get coated on the rice.
Finally, add chopped spring onion on top.
Serve with Veg Manchurian or Gobi Manchurian.
Note:
Rest over rice can be used to make this veg fried rice.
Any vegetables can be used to make this rice its your choice.
Vegetable Manchurian:
Mouth watering tasty, vegetable Manchurian can be made easily at home no need to rush to the hotel.

Step-1: Ingredients to prepare 20 to 25 vegetable balls:
Carrot-1 cup
Beans-1 cup
Cabbage-2 cups
Maida-3 tbsp
Corn flour-1 tbsp
Rice flour-1 tbsp
Salt-1/2 tsp
Chilli powder-1 tsp
Ginger, Garlic paste-1 tsp each
Step -2: Ingredients to prepare Sauce:
Tomato sauce-2 tbsp
Chilli sauce-1 tbsp
Soya sauce-2 tbsp
Salt-1/2 tsp
Sugar-1/4 tsp
Pepper powder-1/4 tsp
Ginger garlic paste
Corn starch-1/2 cup diluted
Capsicum, Coriander, spring onion and Onion for seasoning
Method to follow:
Finely chop all the Vegetables. Keep separately Capsicum and Onion for seasoning in the final step.
In a wide bowl mix all vegetables with salt and squeeze out if excess water.
Mix all other step-1 Ingredients mix well and make it into small lemon sized balls.
Heat wok with 200 ml of oil and deep fry prepared vegetable balls until golden brown.
Can serve as dry vegetable balls without sauce.
Prepare Sauce:
Mix all step 2: Ingredients In 1/2 cup of water, dilute it more if you prefer more sauce.
Heat pan with 2 tsp of oil fry onion and capsicum until it’s color changes slightly, don’t cook more it should be crunchy.
Add mixed sauce allows it to boil for 3 minutes.
Now add fried veg balls toss and transfer to a serving dish.
Garnish with chopped coriander leaves and spring onion.
Vanilla Cake and Orange cake:


Ingredients:
Plain flour(Maida)-1 cup
Castor sugar-3/4 cup reduce sugar for Orange cake because orange juice has the sweetness
Baking powder-1 tsp
Milk-3/4 cup or Orange Juice for Orange cake
Eggs-1 nos
Vanilla essence-1/2 tsp or zest of orange-1 tsp for Orange cake
Butter-100gms (use after defrosting for better result)
Method :
1. Sieve all dry ingredients, Maida and baking powder together.
2.Preheat Oven at 180 C for 10 minutes.
3..Mix Egg, milk butter and sugar, beat on low speed with an electric mixer for 2 to3 minutes.
4. Gradually add sieve mixer to the blender mix for 2 more minutes on medium speed until it becomes fluffy and smooth.
5. Grease baking tray or cake tin, Pour mixer 3/4th of the pan.
6. Bake for 25 minutes, switch off, Keep in the oven for 10 more minutes, allow it to cool completely.
Make slices and serve.
If using a muffin mixture, pour into muffin tins and bake for 20 minutes or until cooked.
Mint Rice:
Easy recipe for busy women, Mint flavored rice are instant and simple to make. Healthy rice, makes you feel to eat more! Wonderful combination with potato chili fry and raitha. The whole house will be filled with the aroma of mint. Since pudina has a very strong aroma, it gets to stimulate your brain functioning and helps cure nausea.
Mint leaves are a great remedy to relieve the pain caused by menstrual cramps.
It has anti-bacterial and anti-inflammatory properties and so it fights against tooth decay and bad breath and is widely used as mouth fresheners.

Ingredients:
Rice basmati-1 cup
Salt-1 tsp
Onion-1 chopped
To grind:
Pudhina(Mint)- 1 cup
Garlic-4 pods
Ginger 1-inch piece
Green chili-5 nos
Tomato -1 small
Onion-5 nos
To Temper:
Cumin seeds-1/2 tsp
Cashews-5 nos
Oil2 tbsp
Method:
Soak for rice 15 minutes and boil with 1 1/2 cup of water.
Grind the above ingredients to smooth paste.
Heat pan with 2 tbsp of oil season with cumin and broken cashews.
Add chopped Onion saute till golden brown, add the ground paste and saute until raw smell changes. (for 2 minutes).
Add cooked rice to it, add salt and mix well.
Note: To avoid breaking rice easily while mixing allow cooked rice to cool for a while before adding to the masala.
Mint rice is ready to serve with Potato chili fry.

Chocolate fudges:
Chocolate fudges for chocolate lovers so yummy……… here is the recipe,
One cup Milk Powder or condensed milk is too good
One cup Sugar (half cup if condensed milk is used)
Quatre cups ghee or Butter
3 tbs of Cocoa powder
1/4cup water to dissolve sugar( if milk powder is used)
procedure:
1. Dissolve sugar in 1/4 cup water and heat in a thick bottomed pan.
2.Once it dissolves completely and when it starts boiling lower the flame and add the milk powder, cocoa powder, and butter or ghee and mix well.
3.keep stirring and heat in medium flame.when it starts bubbling from the sides. grease a plate with ghee or butter and keep it ready.
4. Heat for one more minute and pour it into the plate.
5. Let it cool for 30 minutes and cut it into desired shapes.
Enjoy Diwali this is a special recipe for children.
KALAKAND is one of the easiest and delicious sweet which I learned from my friend! You can make it 2 days before Diwali keep it in the fridge.
Ingredients and Method:
8 cups or 2-quart milk
1/2 cup sugar
2 to 3 tablespoons lemon juice (for making paneer)
1 tablespoon sliced almonds or pistachio for garnishing
Making Paneer:
Mix lemon juice in a ¼ cup of hot water and put aside.
Boil the 4 cups of milk in a heavy bottomed pan over medium heat, stirring occasionally, making sure not to burn the milk.
As the milk comes to a boil, leave it for 2 minutes to reduce boiling point, add the lemon juice gradually and stir the milk gently. The curd will start separating from the whey, turn off the heat.
Once the milk fat has separated from the whey, drain the whey using a strainer lined with cheesecloth, or muslin cloth.
Wrap the curds in a muslin cloth, rinse under cold water, and squeeze well. This process takes out the sourness from the lemon.
To take out the excess water, squeeze the wrapped paneer. Do not knead the paneer.(wash to remove the taste of lemon, squeeze it well to remove water)
Making Kalakand:
1. Boil remaining 4 cups of the milk in a heavy bottom frying pan on medium-high heat until the milk reduces to about two cups.
2. Make sure to frequently stir the milk as the milk burns easily in the bottom of the pan.
3. Add the paneer in the milk and keep stirring till the mixture thickness and form a soft dough consistency.
4. Add the sugar and continue to cook and stir until the mixture becomes soft lump and start leaving the pan from sides.
5. Pour it over greased plate keeping about a half inch thick.
Let it cool for about one hour. Cut the kalakand in squares.
Celebrate with different taste of sweet. It is ready to serve your Diwali guest.
Tips:
Putting a few spoons of water in the pot before putting milk reduces burning the milk bottom of the pan.
If kalakand is too soft put the plate in a microwave oven (plate should be microwave safe) for 2 to 3 minutes. Making sure kalakand doesn’t become dry.
Cauliflower Gobi Manchurian:
Gobi Manchurian dry version, Cauliflower Manchurian is an Indian Chinese appetizer or starter and very different from the gravy version. Adaptation of Chinese seasoning and cooking techniques to suit the Indian palate. The Cauliflower has a crispy coating and is tossed with mouth-watering spicy sauces. It served as a starter and with vegetable fried rice. Try this absolutely delicious recipe!

Ingredients:
Cauliflower-1 medium size(cut into bite size)
Corn flour-3 tbsp
All-purpose flour-5 tbsp
Salt-1/2 tsp
Ginger garlic paste -2 tsp
Chilli powder-1tsp
Method to prepare Gobi fries:
1. Clean cauliflower florets blanch it spread in a paper towel for a while to absorb excess water.
2. Mix all other ingredients by adding 1/2 cup of water batter should be Pancake or Dosa batter consistency nor too thick or watery.
3. Put all florets to immerse in mixed batter OR Dip the cauliflower into the batter one at a time, making sure it is completely covered by the batter.
4. Heat oil in a wide pan put few of the florets(fry in batches) in the hot oil so as not to stick each other. (put one after the other). Fry them turning occasionally,
5. Fry until golden brown if you prefer more crispy do the double frying.fry them earlier, re-fry them
Ingredients for sauce:
Onion finely chopped-1 small
Capsicum finely chopped-1 small
Celery-2 tbsp chopped
Spring onion-2 tbsp
Garlic chopped-1 tbsp or paste
Tomato sauce-2 tbsp
Soya sauce-2 tbsp
Chilli sauce-1 tsp
Ground Pepper-1/4 tsp
Oil-1 tbsp
Method to prepare sauce:
Heat pan with oil, fry onion, Garlic,Capsicum in high flame.
Add all sauces, Pepper and Salt now add fried Cauliflower mix in low flame for 3 minutes, toss well.
Sprinkle celery and Spring onion, remove from fire transfer to serving the dish and serve as an appetizer.
Note: Fry them before you serve or otherwise re-fry them before dipping in the sauce or it will lose its crispness.
Bread and Egg Toast:
We like to prepare different type of breakfast but in the early morning its really difficult to get much time to cook, in this case, some idea to go for different and easy recipes with bread. Of course, this is easy to pack and eat also….Ingredients:
Bread-4 slices
Egg -2 nos
Spice it up with Pepper-2 pinches
Salt -2 pinches
Turmeric powder-1 pinch
Milk -2 tsp
Oil or Butter to toast bread
Method:
Beat egg until fluffy add Salt, Turmeric powder, Milk and Pepper powder beat well till froth forming.
Heat pan, Dip bread slices in the beaten egg both the sides, toast in low flame sprinkle some oil on sides.
Turn other side and toast until light brown.
Cut into desired shapes and serve with Orange juice.
Note : Instead of Salt and pepper you can beat Egg with 2 tsp of Sugar and toast with butter for Bombay toast.
Caramelized bread:
Children will Love it !!!!!!! serve with a glass of milk, no need to spread jam or to get confused what to stuff in……

Ingredients:
Bread slices-4
Butter- 2 tbsp
Sugar (powdered)- 2 tsp
Rose essence-3 drops
Method:
Take a bowl to add butter, powdered sugar, and rose essence together mix well.
Spread mix on both sides of bread slices evenly.
Heat Tawa and toast bread in low flame until golden brown.
Pack it for your breakfast and enjoy.
Tofu or Paneer starter:
Tofu is rich in calcium and iron An excellent source of amino acids, iron, calcium, and other micronutrients, tofu is a versatile ingredient with many health benefits. Tofu is an excellent food from a nutritional and health perspective. It is thought to provide the same sort of protection against cancer and heart disease as soya beans.
An introduction to tofu
Tofu, or bean curd, is a popular food derived from soya. It is made by curdling fresh soya milk, pressing it into a solid block and then cooling it – in much the same way that traditional dairy cheese is made by curdling and solidifying milk. The liquid (whey) is discarded, and the curds are pressed to form a cohesive bond.
Tofu fry with capsicum(Shimla Mirch) as a starter:
Tofu or Paneer -200gms cut into cubes
Capsicum Red, Yellow, and Green
Salt-1/2 tsp
Pepper-1 /2 tsp
oil-1 tsp
Toothpick 15 nos to arrange before serving
Procedure:
Heat pan in medium flame fry Capsicum and Paneer or Tofu all separately.
Finally, add all together sprinkle salt and pepper.
Arrange accordingly such that different colors attract to eat.
Note: This can be grilled by mixing all and arranged.
Fast fry Capsicum(Shimla Mirch):
Capsicum with any vegetable tastes yummy and easy to cook because gets cooked fast than any, just cut and saute with desired masala and salt……it matches with Roti or cooked rice
Ingredients:
Capsicum-Red, Green, Yellow each one number cut into square pieces
Cauliflower or green peas 1/2 cup
Tomato purée or Tomato chopped-1
Salt-1 tsp
Sambar masala powder-1 1/2 tsp
Onion 1/2 chopped
Method:
Heat pan with 2 tsp of oil season with Fennel seeds and curry leaves add onion fry until light brown.
Add cut vegetable saute in medium flame for 3 minutes, add tomato.
Add Salt and Sambar masala powder mix well cook until soft.
Serve with rice or Roti
Caution: It gets cooked fast and becomes too watery in the case of closed cooking and for a long time.

I made this recipe it came out well you can also try this cookie.
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon instant coffee granules
8 tablespoons unsalted butter, at room temperature
1/2 cup sugar
1/2 cup packed light brown sugar
1 large egg
1 tablespoon vanilla extract
7 ounces dark chocolate-covered espresso beans (about 1 1/4 cups)
Preparation:
1. Preheat oven to 350°F. In a bowl, stir flour, baking soda, salt, and coffee. In a separate bowl, using an electric mixer on medium speed, beat butter and both sugars until light, about 3 minutes. Beat in egg and vanilla; scrape down sides of the bowl as necessary.
2. Add flour mixture to butter mixture and stir until just combined. Gently mix in espresso beans.
3. Spoon dough by tablespoonfuls onto 2 ungreased baking sheets, spacing about 1 inch apart.
Bake until lightly browned, about 10 minutes, Let stand 2 minutes, then remove cookies to a wire rack.
Garlic Bread

The simple recipe this mixture you can prepare and store it before the day will help you in a hurry.
Ingredients:
4 tablespoons unsalted butter, softened
2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped fresh flat-leaf parsley
4 teaspoons finely chopped garlic
Cumin seeds-1/2 tsp
Green chili -1
Sugar -1/4 tsp or Salt
1 loaf Italian bread
1/4 cup grated cheese( optional)
Instructions:
Preheat oven to 350°F
1. Stir together the butter, oil, garlic, and parsley in a small bowl.( I use to grind coarsely in mixer garlic, green chili, cumin seeds finally parsley and butter, mix this mixture with olive oil).
2. Cut the bread into 1-inch-thick slices without cutting all the way through to the bottom, leave the slices attached to each other.
3. Spread the mixture evenly stuff sufficiently and bring to broil both the sides.
4. This can also be done by toasting in Tawa carefully, For this cut the bread into slices.

The bread roll is easy recipe versatile fillings can be made according to the taste of your children or you, Are your children bring back their Tiffin box with leftovers? Don’t worry they will fill up their stomach with this wonderful recipe in a minute. Crunchy and spicy bread roll can also serve as Appetizer with Orange juice.

Then add peas and saute well.
Add mashed potato (paneer), Salt, Garam masala powder, Turmeric powder and saute in low fire until the raw smell disappears.
Allow it to cool and use for filling.

Add celery leaves and pepper set aside to cool, use it for filling Bread or Chappathi roll to pack your box.

Coconut Grated-1 cup or (grated apple )
Sugar-1 tbsp
Elaichi powder
Cashews broke 4 nos
Ghee 2 tsp or butter 3tsp
Method to prepare:
Heat pan with butter adds Cashews fry golden brown then add coconut saute for a while (2 minutes)
Add sugar, when it melts sprinkle some Elaichi (cardamom powder) Mix it in low flame.
let it Cool use it for filling
Now how to fill this in bread to fry or bake?
Take water in a wide bowl
Remove sides of your bread love
Dip one side of the loaf in water( a second )squeeze out excess water by placing bread in between your palms.
Arrange it on a flat kitchen top.
Fill your choice of fillings and seal it properly, use few water drops or make wet your fingers and press it to seal edges if necessary.
Shallow fry your Bread roll in the low flame is a must.
Serve with Coriander chutney or Tomato Chutney
