Palakkai urundai / Baby jack fruit balls:

Palakkai urundai or baby jack fruit ball,  spicy and delicious ball is served as an appetizer.Innovative idea with palakkai. Normally palakkai is prepared in south Indian cooking like perattal, podimas, kootu as we do with other vegetables, innovatively here we have prepared fried balls, recipe from my mother’s special mutton balls but pure vegetarian. A stepwise recipe is provided for your convenience.

Ingredients-1:

Palakkai-200 gms

Salt-1 tsp

Turmeric powder-1/2 tsp

Ingredient-2:

Fennel seeds-1 tsp

Cumin seeds-1/2 tsp

Pepper corns-1/2 tsp

Cloves-3 nos

Cinnamon-1/2 inch

Elaichi-1

Cashew nut-5 nos

Garlic-3 pods peeled

Ginger-1 inch peeled and sliced

Green chilli-4 to 5

Shallots-3 nos peeled

Coriander leaves-1 or 2 stalks optional

Freid channa dal-2 tbsp

Method to prepare:

1. Powder fried channa dal, keep it ready.

2. Heat pan with 1 tsp of oil and fry onion, garlic, green chili, and ginger. Next fry all other ingredients mentioned in” Ingredients-2″ to golden yellow you can feel the wonderful aroma of these fried spices.

3. Allow it to cool and grind to a smooth paste.

4.Boil cube cut raw jackfruit for 2 whistles. When it comes to normal temperature, drain water completely, mash it or grind carefully in a mixer for second or two, not to a fine paste.

5. Mix all 3 mixtures together with Salt.

6.Make it to a gooseberry sized ball and refrigerate for 20 minutes.

7. Heat oil in a wok and deep fry balls to golden brown.

Palakkai perattal / Raw Jack fruit masala

Palakkai perattal/Raw Jack fruit masala:

In Tamil Nadu we have three main fruits we say it as,Ma(Mango),Pala(Jack fruit).Vazhai(Banana). Raw varieties of these three fruit are used in cooking.It is perfectly made to blend with wonderful spices as result with delicious curry in their meals.Unripe Jackfruit or Baby Jack fruit is used mainly for curry type dishes in India and South east Asia,we get plenty of this vegetable during summer season. It is also famous in Chettinad region,  variety of dishes can be made out of Raw Jack fruit like Poriyal, Podimas, Perattal,Sothi, Kuruma ,Koottu and even in kootukkai Kuzhambu made during Pongal festival.

Raw jack fruit is really great in taste,but patients needed to cut this raw jack fruit.I love Raw jack fruit recipe, I want to share my mothers recipe which I used to enjoy always.We can feel the taste of mutton in baby jack fruit, so we say this be can replaced for mutton.

Raw Jack fruit masala:

Ingredients:

Baby jack fruit-200 gms

Salt turmeric powder

Onion- 1

Tomato-1

Ginger garlic paste-1 1/2 tsp

Masala powder-2 tsp I use normal sambar masala powder

Curry leaves-2 twig

To grind:

Coconut-1 tbsp

Fennel seeds-1/2 tsp

Cumin seeds-1/2 tsp

Cinnamon-1 inch

Cloves-3 nos

Pepper corns-1/2 tsp

To season:

Oil -1 tbsp

Fennel seeds-1 tsp

urad dal-1/2 tsp

Method:

1.Peel skin and cube cut jack fruit drop it in to the water to avoid discolouration.

2.Boil in a pressure pan with salt and turmeric powder for 1 whistle.

3.Grind the given ingredients above to a smooth paste by adding little water.

4.Heat pan add 1 tbsp of oil,  season it, add chopped onion and ginger garlic paste saute in low flame till the raw smell changes,

5.Add Tomato,curry leaves and 1/2 tsp of salt saute well, add cooked palakkai, masala powder and ground paste, cook in medium flame for 5 minutes.

6.when the masala gets cooked well and coated with the vegetable switch off and serve with rice and roti.

Note:

1.Add 1/2 tsp of water while sautéing ginger garlic paste to avoid burning paste.

2.Instead of grinding masala (above step-3) you can use garam masala powder,skip step -3

3.Drop cut palakkai in water mixed with 1 tsp of butter milk to retain its original colour.

Procedure to cut Raw Jack fruit:

1.First oil your hands and a sharp knife so the latex won’t stick. Carve off the rind, then slice and cut to the size you want.

2.Cut palakkai into 2 halves Place it on a paper for few minutes all milky liquid will drain out.

3.Apply few drops of oil on hand and knife.

4.First cut into small rounds then peel skin .

5.Cut in to one inch lengthwise pieces or desired shapes put in the water mixed with one teaspoon of buttermilk to avoid discolouration.

Ingredients:

Jack fruit-1 small

Onion-1 big

Green chillies-2 to 3

Ginger grated-2 tsp

Curry leaves-2 twigs

Salt-1 tsp

Turmeric powder-1/4 tsp

Grated Coconut-3 tsp(1 tbsp)

Pepper powder-1/4 tsp

To temper:

Oil-1 tbsp

Mustard seeds-1 tsp

Urad dal-2 tsp

Method to prepare:

Peel and Cut Jack fruit and onion, make a slit on green chillies.

In a pressure cooker add  2 cups of water salt and turmeric powder allow it to boil, now add cut raw Jack fruit to it, close and cook for a whistle.

When the steam releases drain water completely, heat a wok with 2 tsp of oil season it with Mustard seeds and Urad dal .

Add chopped onion, green chillies, curry leaves and  chopped ginger saute for a minute till it turns golden yellow, now add cooked Palakkai and stir it well.

Cook in low flame for 3 minutes to 5 by gently stirring it.

Add grated coconut and  pepper powder,transfer to serving dish.

Serve with cooked rice and sambar or any Puli kuzhambu.

Palakkai Sodhi:

BabyJack fruit Sodhi,This is yet another Chettinad delicacy made out of baby jack fruit is also a common item in a grand Chettinad vegetarian lunch. Can be served with roti or chapathi.

Ingredients:

Palakkai(Baby jack fruit)-peel skin slice into cubes-1/2 inch thikness

Big Onion-2 nos chopped

Tomato medium size 1 chopped

pepper corns 1/2 tsp

Curry leaves

Potato – 1 small optional

Oil to season-3tbs

Water-3 cups

Salt 1 1/2 tsp

Ginger garlic paste-1 tsp

To grind:

Coconut grated-1/2 cup
Green chillie-5
Pottukadalai (fried gram)-1 table spoon
Cashew-5 optional
Fennel seeds-1/2 teaspoon
cumin seeds-1/2 teaspoon
poppy seeds(kasa kasa)-1/2 tsp

Method:

Heat pan in low flame add all ingredients fry one after the other in every few seconds In one tsp of oil add cashew, fried gram,  garlic, fennel seeds cumin seeds, green chillies and poppy seeds fry for 3 minutes add coconut allow it to cool and grind into a smooth paste.

Procedure:

Cook Palakkai for a whistle with salt and turmeric powder.

Place cooker or pan on stove heat with 3tbs of oil season pepper corns after it splatters add ginger garlic paste,  chopped onion and cut potato until it  gets golden yellow colour or tomato leaves skin.

Add tomato, salt, curry leaves and  cooked palakkai sauté for 3 minutes add ground masala as it is already fried no need to sauté for long time add 3 cups of water close and cook  till potato cooks. It should be in curry form you can add 1/2 cup of coconut milk if necessary.
This it goes with Hot rice, chapati, poori dosa.
