Mixed nuts Kozhukkattai:

Healthiest Innovation in our traditional recipe. Kozhukkattai is traditionally made with rice flour as a base and filling prepared in various combinations, including spice and sweet. Here, I thought to prepare something healthier to consume and without any artificial sweet or sweets like sugar and jaggery. Dates are naturally sweet in taste and the crunchy nuts added are very healthy. This wonderful combination of nuts and dates, filled in rice pod is heavenly in taste. Ingredients: To prepare the outer covering 

Rice flour-1 cup ( yields 20 to 23 Kozhukkattai)

Salt-1/2 tsp

Oil-2 tsp

Ingredients for filling mixture:

Dates-15 nos

Kiss-miss, dry grapes- 1 tbsp

Coconut grated-2 tbsp

Almond-fist full

Cashew nuts- fist full

Pista, walnut -5 to 10 each (optional)

Peanuts-1 tbsp

Cardamom-1/2 tsp

Ghee-2 tsp to roast the nut mixture

Method:

Coarsely grind all the above-mentioned nuts in a mortar or pestle, collect it separately.

Grind the dates and dry grapes together for a minute to mash it well.

Heat pan with one teaspoon of ghee and slightly roast the nut mixture.

In a wide pan add roasted nut mixture, dates mixture, and coconut.

Mix it well all together and make it into a small gooseberry sized balls.

In a vessel boil water, take another pan to add the rice flour, salt, and oil as mentioned above.

Gradually pour boiling water into the rice flour and mix it with the ladle to a tight dough.

Make the dough to small lemon size equal balls, Now grease your fingers and palm, make the balls to thin patties or cup-shaped to fill the mixture.

Make it to your desired shape, such that the filling does not come out of the outer covering.

Steam cook the Kozhukkattai, in two batches for 10 to 15 minutes.

Note:

If you prefer to have a more sweet taste, add some grated jaggery with the mixture.

 Beetroot Kola Urundai / Beetroot Balls:

Authentic Chettinad recipe Beetroot Kola Urundai is one of their delicious mouth watering recipe. Alluring recipes from Chettinad and their hospitality makes more interesting to admire. Beetroot kola urundai has crispy outer layer, soft and spongy inner part prepared with soaked dal and aromatic spices blend together. Protein rich dal and beetroot give a wonderful scrumptious taste. Easy to prepare, serve with any combination of meals or as a starter.

Ingredients:

Beetroot-150 gms or one medium size

Onion-1  chopped

Curry leaves chopped  few

Oil-100 ml

To Grind:

Toor dal- 50 gms

Channa dal- 50 gms

Fennel seeds-1 tsp

Cumin seeds-1/2 tsp

Pepper-1/4 tsp

Red chilli-4 to 7

Ginger-1 inch skin peeled

Garlic-4 pods skin peeled

Method:

  1. Wash and soak toor dal and channa dal for an hour.
  2. Coarsely grind the above mentioned “To Grind” ingredients with soaked dals. Do not add water, let the mixture be thick.
  3. Wash, peel and grate the Beetroots. Set aside.
  4. Take a wide bowl, mix all ingredients with 1/2 tsp of salt.
  5. Make the mixture into small balls.
  6. 12969420_1077417168966559_2030628292_nHeat oil and fry 3 minutes in medium flame and 2 minutes in low flame.This mixture has to be fried as soon as they are mixed, else it becomes watery when stored. Drain on paper towels.

Note:

  1. Drain water completely from dal before grinding.
  2. Chop onion and curry leaves to a fine pieces which make the mixing process easy.
  3. Grate beetroot or coarse grind the chopped beetroot pieces.
  4.  In case of more watery add some gram dal or rice flour to thicken the mixture (texture and taste may have slight  difference).

Ingredients:

Milkmaid – 1 cup OR (milk -1/2 cup , milk powder-1/2 cup, sugar 1/2 cup)

Mixed nuts of your interest-1 cup

Dry grapes few

Sooji-3/4 cup (fine rava)

Coconut-1/2 cup

Elaichi powder-1 tsp

Ghee-1 tbsp

Method to prepare:

Take a wide pan thick bottom, add 1 tsp of ghee and  brown roast all nuts. Roast coconut till it looses its moisture.

Add one more teaspoon of ghee and fry rava to a golden brown. or until you get a fine roasted aroma.

Grind roasted in a hand mixer to bits and pieces.

Heat pan again and add milkmaid, roasted rava , nuts and 1 tbsp of coconut, stir it well in medium flame till it becomes thick to make balls.

When comes to normal temperature make it into small lemon sized balls and refrigerate for 30 minutes.
